Gazpacho
Gazpacho is a cold soup with a tomato base, best enjoyed in the summers. It is very easy to prepare, takes about 5 minutes to make. Serve chilled or over ice garnished with fresh basil leaves for the best taste.
Ingredients:
- 4-5 fresh tomatoes, peeled and chopped
- 1 medium Cucumber, chopped
- 1 small red onion, chopped
- 1 green chilli pepper (substitute with half a bell pepper if you don't like the heat)
- 1 tsp tomato ketchup
- 2-3 tsp olive oil
- Juice of 1 lemon
- Water to desired consistency
- Salt and pepper.
- 1 tsp aamchur powder or chat masala (for the Indian twist)
- Fresh Basil
Method.
- Combine all ingredients and refrigerate until chilled.
- Enjoy :)
