Desi Pasta
I love Italian food. Some pasta, fresh green salad, garlic bread, and tiramisu – these make a great dinner. Here is an Indianized version of pasta. As with most of my recipes, this is loaded with a lot of vegetables, and has a hint of masala. This takes about 15 minutes to make.
Ingredients:
- 1 potato
- 1 carrot
- 1 green or red or yellow pepper
- 1 jalapeno (you decide)
- 0.5 cup peas
- 2 tomatoes
- 1 cup pasta of choice – I use Penne
- 1 tbsp olive oil
- 1 tbsp tomato puree
- 2 tsp chana masala – for the desi twist
- Salt and Pepper
Method:
- Julienne all the vegetables
- Heat the olive oil and stir fry the vegetables
- When vegetables are done, add the chana masala and fry for about 30 seconds.
- Add the sauce and mix thoroughly.
- Cook the pasta as per the package instructions. When done, add to the vegetables and heat through.
- Add salt and pepper to taste.
Serve hot, with garlic bread, minestrone soup and fresh green salad.
