Angel Hair Pasta
This is my experiment with pasta – I like to make pasta without using tomato sauces. This pasta is generally bursting with flavor – I put in marinated artichokes, capers, sun-dried tomatoes, olives and roasted bell peppers. I do not add any seasoning – not even salt. Try it some time, and please let me know how you like it. It is really very quick to make, only takes 10 minutes or so.
Ingredients:
- Marinated artichokes – 2 tbsp
- Sun dried tomatoes – 1 tbsp
- Capers – 2 tsp
- Olives – 10 or so, deseeded and sliced
- Roasted bell pepper – golden or red, you decide
- Angel Hair Pasta
- Olive Oil – 2 tbsp
- Parsley for garnishing.
Method:
- Cook the angel hair pasta as per package instructions. Drain, toss with 1 tbsp olive oil and set aside.
- In a wok, add the remaining olive oil and heat. Add all ingredients except pasta and parsley.
- Once all the vegetables have blended, remove from heat, and mix well with the pasta.
- Garnish with parsley.
Serve hot with bread, minestrone soup and fresh crisp green salad.
