Desi Pasta

I love Italian food. Some pasta, fresh green salad, garlic bread, and tiramisu – these make a great dinner. Here is an Indianized version of pasta. As with most of my recipes, this is loaded with a lot of vegetables, and has a hint of masala. This takes about 15 minutes to make.

Ingredients:

  1. 1 potato
  2. 1 carrot
  3. 1 green or red or yellow pepper
  4. 1 jalapeno (you decide)
  5. 0.5 cup peas
  6. 2 tomatoes
  7. 1 cup pasta of choice – I use Penne
  8. 1 tbsp olive oil
  9. 1 tbsp tomato puree
  10. 2 tsp chana masala – for the desi twist
  11. Salt and Pepper

Method:

  1. Julienne all the vegetables
  2. Heat the olive oil and stir fry the vegetables
  3. When vegetables are done, add the chana masala and fry for about 30 seconds.
  4. Add the sauce and mix thoroughly.
  5. Cook the pasta as per the package instructions. When done, add to the vegetables and heat through.
  6. Add salt and pepper to taste.

Serve hot, with garlic bread, minestrone soup and fresh green salad.
